Barbara Sibley is Creative Director at Holiday Cocktail Lounge, the newly-restored haunt of Madonna, Sinatra, Keith Richards and Trotsky. A noted chef, restaurateur and culinary authority, Barbara's East Village background allows her to bring together both the history and the future of the bar. She participated in every phase of Holiday Cocktail Lounges' restoration from construction and design to menu development. She also led the research into the bar's past by scouring microfilms at the New York Public Library to uncover its storied legacy as a speakeasy, burlesque and dive bar and use this unique legacy for it to be an iconic contemporary bar. Barbara is also currently the proprietress of La Palapa Cocina Mexicana. As a ground breaking member of ' NYC's Mexican Revolution' it was awarded the Distinctivo €ù by Sabores Autenticos de Mexico Foundation. In 2015 she joined Urban Space Vanderbilt and opened the fast-casual La Palapa Taco Bar.
