Didn’t make it to the Caribbean over the summer? Are you wishing you could go back? We can all escape to the Islands for one night at this year’s fall potluck. Let’s celebrate the tantalizing flavors of the islands and bring dishes that feature countries like Jamaica, Trinidad and Tobago, Barbados, Puerto Rico and Grenada to name a few. Let your imagination run wild with dishes that include coconut, plantain, mango, jackfruit, scotch bonnet pepper, pineapple, papaya and many, many more. Did I say Rum??? If your favorite Caribbean island wasn’t mentioned, don’t fret. We want you to show up and show off to represent. Bring your favorite island’s flag with you because we might even wave it a few times.
